feat(rename): v1 - rename the repo and MCP server after adding MCP Server capabilities

MCP Server Capabilities Now Implemented

The MCP Server capabilities have been fully implemented in the codebase:

Current Status:

• ✅ unified_mcp_server.py is the main MCP server implementation
• ✅ FastMCP 2.0 is being used for the server
• ✅ Multiple MCP tools implemented in src/mcp_tools/
• ✅ Entry point configured in pyproject.toml: mcp-server = "src.unified_mcp_server:main"

MCP Tools Available:

• Search tools (basic and advanced)
• Document management
• Collection management
• Analytics
• Deployment tools (blue-green, canary, A/B testing)
• Cache management
• And more...

Since the MCP capabilities are now fully integrated, this issue can proceed with the repo rename if desired. The current name "ai-docs-vector-db-hybrid-scraper" could potentially be updated to better reflect the MCP server capabilities.
