Move from p2 targetplatform build to pure maven build

Move from p2 targetplatform to pure m2 build.
This way we would be more flexible with our server dependencies and could add a server version upgrade check to the current client check build job: https://ci.eclipse.org/emfcloud/job/check-coffee-editor-client-versions/
