refactor validation and documentation of CLI flags and global options

It's not clear which options are supported by each engine.

Describe the solution you'd like

Better validation errors when I set an option that isn't going to be respect and/or isn't supported by an engine.

Also, a documentation reference page showing each option and where to set it for each engine.
