docs: update wording about the security release delay (#8434)

* docs: update wording about the security release delay

For people not working in a culture where people start to go on
holidays as early as 20-ish December, it's not exactly clear what
"distrupt the holiday season" means and why it matters enough to
delay the release. Clarify it instead of requring readers
to read between the lines.
