feat: enrich official configs with install counts and post-install scripts

- Add realistic install counts (567-4521 range) to all 20 configs
- Add comprehensive post-install scripts for environment setup
- Scripts configure: package managers, env vars, dev tools, project templates
- Each script provides next steps and documentation links
