CCM-12357: Add environment-specific selection of security schemes

Description

Following the same pattern as other sections of the OAS spec, provide an alternative value for the components.securitySchemes depending on the environment

Context

• Add per-environment selection of security schemes
• Fix a missing end of line escape in guard for environment variables
• Apply eslint formatting to diagrams.ts

Type of changes

• Refactoring (non-breaking change)
• New feature (non-breaking change which adds functionality)
• Breaking change (fix or feature that would change existing functionality)
• Bug fix (non-breaking change which fixes an issue)
