Unify release workflows

WHY are these changes introduced?

We need to migrate the release process to stop using NPM tokens: https://vault.shopify.io/page/NPM-Classic-Token-Deprecation---November-2025~0kJC.md

The new system requires a single workflow file for all the releases, but we have 3:

• release.yml: regular releases
• release-manual.yaml: if we need a manual release (mostly used for experimental branch)
• snapit.yml: snapshot releases from PR comments

WHAT is this pull request doing?

• Unifies all release workflows in a single file
• Renames the tests workflows to tests-* for clarity
