Replace the shell zip command with rustyzipper to avoid the subprocess schenanigans.
Tested on Windows 11, worked fine via process explorer for me.
This PR closes #121
#123 used pyminizip which was a bad idea. but this is a lot better. I've reviewed the code and everything seems safe and viable. So thanks to rustyzipper I don't have to make this project myself!
