This PR updates the GitHub Actions workflow to include PHP 8.5 in the test matrix for both Linux and Windows environments.
Added 8.5 to the matrix.php configuration in:
All existing combinations (PHPUnit versions and stability flags) will now also run against PHP 8.5.
