Add ZapCap MCP server for video processing

Description

Add ZapCap MCP server to Community Servers section. This server provides video processing capabilities with automatic subtitle generation and B-roll integration using the ZapCap API.

• Server: ZapCap (new community server)
• Changes to: README.md (adding entry to Community Servers list)

Motivation and Context

Adding a community-developed MCP server that solves video processing workflows. The server enables AI assistants to:

• Upload and process videos via ZapCap API
• Generate subtitles with 20+ customization options
• Add B-roll integration automatically
• Use natural language interface for video editing tasks

This fills a gap in video processing capabilities within the MCP ecosystem.

How Has This Been Tested?

• Tested with Claude Desktop
• Verified installation via uvx zapcap-mcp-server
• Tested video upload and processing workflows
• Confirmed all MCP tools respond correctly

Breaking Changes

None. This is a new server addition that doesn't affect existing functionality.
