[PRMP-1080] Use the DocumentUploadReviewService on review api

Description

Refactor the DocumentReviewProcessorService to use the DocumentUploadReviewService instead of the DynamoDBService directly.

Context

This will help to centralise DynamoDB creation logic and validation so that all review-related records are validated consistently against the model before being saved, and direct DynamoDB calls are removed from the handler services.
